Round Two of the Christmas Cards & Cookies Blog Hop


 
Welcome to Round Two of the Christmas Cards & Cookies Blog Hop!  You should have come from Sue's blog.  If you are starting here and wish to hop from the beginning of the hop, please visit Dena’s blog.  There was so much response to the Christmas Cards & Cookies Blog Hop that it had to be split between two weekends.  Round One was held last weekend.  Round Two is this weekend, beginning on Saturday, Dec. 10th, through Sunday, Dec. 11th.  We have a talented group of women who love paper crafting and baking.  Each of them is sharing a recipe for a yummy Christmas treat along with a Christmas card or tag.  Hopefully, you’ll pick up some great ideas for your own Christmas gift giving this season.  So, grab a cup of coffee, sit back, and enjoy!


Oreo Cheesecake Cookies

Yield: About 1 dozen cookies
Prep Time: 20 minutes | Bake Time: 12 to 15 minutes

½ cup unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup mini chocolate chips
1 cup Oreo cookie crumbs 

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a mixing bowl, cream together the butter and cream cheese on medium speed until smooth and well-combined.

3. Add the sugar and vanilla extract and mix until the ingredients are well-combined. Add the flour and mix on low until the flour is incorporated. Stir in the mini chocolate chips with a rubber spatula.

4. Place the Oreo cookie crumbs in a small bowl. Scoop the cookies into about 1½ to 2 balls and then roll in the cookie crumbs. Place the cookie balls on the baking sheet. Bake for 12 to 15 minutes, or until the edges are golden and the tops are slightly puffed.

5. Cool on the pan for 2 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

I made this card for the cookies too. My MIL's birthday is on the 23rd and she always seems to get missed with Christmas being so close. So I used DCWV Sweet Shoppe  12x12 paper pack.  I added some trims and some heart brads. I cut out the cake and popped it up ontop of another cake. Then I added stickles to brighten up the cake.

I also decorated the inside, adding more stickles. The Happy Birthday stamp is a Hero Arts stamp. I used an oval Stampin' Up punch, then added a scallopped punch of pink paper.
